"This is hubby's favorite meatloaf. It can be easily made into a one dish meal by adding some carrots. A clay pot with a lid is required. No liquid is added as it cooks in its own juices."
1Soak clay pot in a large bowl of water for about 15 minutes. Remove pot from water.
2Mix ground beef, bread crumbs, egg, milk, and 1/2 of the onion soup mix together in a large bowl. Form mixture into a loaf and place in the clay pot. Arrange potatoes around loaf and sprinkle remaining onion soup mix over potatoes. Scatter onions over potatoes and add rosemary sprigs. Place lid on the clay pot.
3Place clay pot in the cold oven. Heat oven to 350 degrees F (175 degrees C).
4Bake in the oven until meatloaf is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
